Ingredients

– 8 ounces pasta

– 1 tablespoon olive oil

– 1 package chicken sausages (12 ounces)

– 2 cups sliced mushrooms

– 4 cups spinach, roughly chopped

– 2 cups marinara sauce

– 1/2 cup goat cheese

– Salt and pepper, to taste

– grated parmesan cheese

– fresh basil

– fresh parsley

– red pepper flakes

Instructions

1-Cook pasta: Cook pasta in a large pot of salted water according to package instructions until al dente. Drain and set aside, reserving 1/4 cup pasta water.

2-Heat olive oil: Heat olive oil in a large skillet over medium heat. Add sliced chicken sausage and cook for 3-4 minutes until browned on one side; flip and cook 1-2 minutes more.

3-Add mushrooms and spinach: Add sliced mushrooms to the skillet and sauté for 2-3 minutes. Add chopped spinach and sauté 1-2 minutes until softened. Reduce heat to low.

4-Mix sauce and pasta: Stir in marinara sauce and cooked pasta. Mix in goat cheese and a bit of reserved pasta water. Season with salt and pepper. Warm through for about 1 minute.

5-Serve: Serve with desired toppings.
