Ingredients
4 medium potatoes (russet, red, or white), washed and diced into ¾ inch cubes (no need to peel)
1 tablespoon minced garlic
1 tablespoon olive oil (can be reduced to ½ tablespoon if desired)
⅛ teaspoon salt
⅛ teaspoon pepper
1 ½ pounds boneless skinless chicken breasts or thighs
1 cup shredded mozzarella cheese (freshly shredded recommended, but store-bought is fine)
Fresh parsley for garnish (optional)
Instructions
1-Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
2-Dice the potatoes into ¾ inch cubes.
3-In a large bowl, toss the potato cubes with 1 tablespoon minced garlic, 1 tablespoon olive oil, ⅛ teaspoon salt, and ⅛ teaspoon pepper to coat evenly.
4-Spray a 9×13 inch baking dish with non-stick spray, spread the potato mixture evenly in the dish, and bake for about 15 minutes.
5-Remove the dish from the oven and nestle the 1 ½ pounds of chicken pieces into the potatoes. Optionally brush the chicken with olive oil and season with salt and pepper.
6-Bake for 20 to 25 minutes until the chicken is fully cooked (reaching 165 degrees Fahrenheit internally) and the potatoes are browned.
7-Sprinkle 1 cup shredded mozzarella cheese over the top and return to the oven for a few more minutes until the cheese melts.
8-Garnish with chopped fresh parsley if desired before serving.
