4 skinless, boneless chicken breast halves, pounded to an even ½ inch thickness

Salt and freshly ground black pepper, to taste

2 large eggs, beaten for dredging

1 cup panko bread crumbs (add more if necessary for coating)

¾ cup grated Parmesan cheese, divided (some recipes use up to 2 cups)

2 tablespoons all-purpose flour (or more as needed for dusting)

½ cup olive oil or vegetable/canola oil for frying

½ cup tomato sauce or marinara sauce (homemade or store-bought)

¼ cup fresh mozzarella, diced small, or 1 cup shredded mozzarella cheese

¼ cup chopped fresh basil, plus additional for garnish

½ cup grated provolone cheese (optional; mozzarella alone also works well)

2 teaspoons olive oil or drizzle for finishing before baking

Instructions

Pound the chicken: Flatten chicken breasts to a uniform ½ inch thickness between plastic sheets to promote even cooking. Season both sides well with salt and pepper.

Prepare breading station: Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mix of panko bread crumbs and half the Parmesan cheese. Add optional garlic powder or Italian seasoning for extra flavor if desired.

Coat the chicken: Dust each chicken breast lightly with flour, shaking off excess. Dip into the eggs, then press into the breadcrumb mix, ensuring thorough coverage. Rest breaded chicken 10–15 minutes to help the crust adhere.

Fry the chicken: Heat ½ inch of olive or vegetable oil in a skillet over medium-high heat (around 350°F). Fry the chicken for about 2 minutes per side until golden but not fully cooked. Drain on a wire rack to keep the crust crisp.

Assemble in baking dish: Transfer fried chicken to a baking dish. Spread approximately 2 tablespoons of tomato sauce over each breast. Layer with mozzarella, provolone (optional), and chopped fresh basil, then sprinkle the remaining Parmesan cheese on top. Drizzle each with ½ teaspoon olive oil.

Bake: Preheat oven to 450°F (230°C). Bake for 15 to 20 minutes until cheese melts, bubbles, and browns, and the chicken reaches an internal temperature of 165°F (74°C).

Garnish and serve: Top with extra fresh basil and serve immediately. Optionally accompany with pasta, zucchini noodles, or vegetables and extra sauce on the side.
