Ingredients
15 oz whole milk ricotta
½ cup shredded mozzarella cheese
¼ cup grated parmesan cheese
1 large egg
¼ tsp freshly cracked black pepper
1 rotisserie chicken (about 3 cups cooked chicken)
½ Tbsp salt for pasta water
9 lasagna noodles
4 Tbsp butter
1 yellow onion, diced
2 cloves garlic, minced
¼ cup all-purpose flour
2 cups chicken broth
1 tsp Italian seasoning
½ tsp salt
¼ tsp freshly cracked black pepper
¼ tsp garlic powder
1 cup heavy cream
¼ cup grated parmesan cheese
3 cups baby spinach, chopped
1 ½ cups shredded mozzarella
Instructions
1-Prepare ricotta mixture: In a bowl, combine 15 oz ricotta, ½ cup mozzarella, ¼ cup parmesan, 1 egg, and ¼ tsp black pepper. Mix well and set aside.
2-Cook chicken and noodles: Remove skin and shred rotisserie chicken to get about 3 cups. Boil lasagna noodles in water with ½ Tbsp salt until tender, then drain them carefully.
3-Make sauce: Set your oven to 375°F. In a skillet, melt 4 Tbsp butter and sauté the diced onion and minced garlic until they turn translucent. Stir in ¼ cup flour and cook until it’s lightly browned, then gradually whisk in 2 cups chicken broth to make it smooth.
4-Add seasonings and finish sauce: Mix in 1 tsp Italian seasoning, ½ tsp salt, ¼ tsp black pepper, ¼ tsp garlic powder, 1 cup heavy cream, and ¼ cup parmesan. Keep stirring until the sauce thickens, then add 3 cups chopped baby spinach and cook until it wilts.
5-Assemble the dish: In a baking dish, spread a thin layer of sauce at the bottom. Layer the noodles, ricotta mixture, and shredded chicken, repeating as needed. Top it off with the remaining sauce and sprinkle 1 ½ cups mozzarella on top.
6-Bake: Pop it in the oven at 375°F for 25 minutes, then broil for 3-4 minutes to brown the cheese perfectly.
