  • Total Time: 3 hours 26 minutes
  • Yield: 4 to 6 servings 1x

Ingredients

Scale

2 lb / 1 kg boneless, skinless chicken thigh fillets

~3 tsp minced garlic

1 tbsp white wine vinegar

3 tbsp lemon juice

1 tbsp extra virgin olive oil

3 tbsp full-fat Greek yogurt

1 1/2 tbsp dried oregano

1 tsp salt

Black pepper

2 cucumbers

1 1/4 cups full-fat Greek yogurt

1 tbsp lemon juice

1 tbsp extra virgin olive oil

1 minced garlic clove

1/4 tsp salt

Black pepper

3 tomatoes

3 cucumbers

1/2 red Spanish onion

1/4 cup fresh parsley leaves

Salt and pepper

4 to 6 pita breads or flatbreads

Instructions

1-Marinate the Chicken: Combine all marinade ingredients including ~3 tsp minced garlic, 1 tbsp white wine vinegar, 3 tbsp lemon juice, 1 tbsp extra virgin olive oil, 3 tbsp full-fat Greek yogurt, 1 1/2 tbsp dried oregano, 1 tsp salt, and black pepper in a ziplock bag. Add 2 lb / 1 kg boneless, skinless chicken thigh fillets, seal the bag, and massage to coat completely. Let it marinate for at least 2 hours, preferably 3 hours, or up to 12 hours for the best flavor, but not longer than 24 hours.

2-Prepare the Tzatziki: Halve 2 cucumbers lengthwise and scrape out the seeds. Coarsely grate the cucumber and squeeze out the excess liquid to yield about 1/2 to 3/4 cup. Mix it with 1 1/4 cups full-fat Greek yogurt, 1 tbsp lemon juice, 1 tbsp extra virgin olive oil, 1 minced garlic clove, 1/4 tsp salt, and black pepper. Stir well and set aside for at least 20 minutes to let the flavors blend.

3-Prepare the Salad: In a bowl, combine 3 deseeded and diced tomatoes, 3 diced cucumbers, 1/2 finely chopped red Spanish onion, and 1/4 cup fresh parsley leaves if using. Season with salt and pepper to taste for a fresh, crunchy topping.

4-Cook the Chicken: Preheat your grill to medium-high and brush it with oil. Remove the chicken from the marinade and discard any excess. Grill the chicken for 2-3 minutes per side until it’s golden brown and fully cooked. Let it rest for 5 minutes before slicing into strips.

5-Assemble the Gyros: Warm 4 to 6 pita breads or flatbreads. Fill each with sliced chicken, the prepared salad, and a generous dollop of tzatziki. For similar grilling ideas, try our chicken tacos recipe to expand your options.
