🍖 This Chicken Fried Steak recipe delivers a crispy, flavorful coating over tender cube steak, making it a satisfying home-cooked classic.
🍽️ Paired with creamy white gravy, it’s a comforting dish perfect for family dinners and gatherings.

  • Total Time: 1 hour
  • Yield: 6 servings

Ingredients

– 1 1/2 cups whole milk

– 2 large eggs

– 2 cups all-purpose flour

– 2 tsp seasoned salt

– Black pepper to taste

– 3/4 tsp paprika

– 1/4 tsp cayenne pepper

– 3 lb. cube steak (tenderized round steak)

– Kosher salt to taste

– 1/2 cup canola or vegetable oil

– 1 Tbsp butter

– 1/3 cup all-purpose flour

– 4 cups whole milk

– 1/2 tsp seasoned salt

– Black pepper to taste

Instructions

1-First Steps: Getting Ready: First, set up an assembly line with three dishes: one with the 1 1/2 cups whole milk and 2 large eggs beaten together, one with the 2 cups all-purpose flour mixed with 2 tsp seasoned salt, black pepper to taste, 3/4 tsp paprika, and 1/4 tsp cayenne pepper, and one with the 3 lb. cube steak. Prepare a clean plate to place the breaded meat. This setup makes the process fun and organized.

2-First Steps: Getting Ready: Work with one piece at a time to keep things from getting messy. Season both sides of the steak with kosher salt to taste and black pepper to taste, then coat it in the flour mixture, dip in the milk and egg mixture, and coat again with the flour mixture. Place it on the clean plate and repeat with the rest of the meat.

3-Cooking and Frying: Next, heat the 1/2 cup canola or vegetable oil and 1 Tbsp butter in a large skillet over medium heat until the butter sizzles but does not brown immediately. Fry three pieces of steak at a time, cooking about 2 minutes per side until the edges turn golden brown. Remove them and keep them warm while you finish the rest.

4-Cooking and Frying: After frying, pour off the excess grease, leaving about 1/4 cup in the skillet, and heat it over medium-low. For the gravy, sprinkle the 1/3 cup all-purpose flour over the grease and whisk to make a roux. Cook it until it turns deep golden brown, making sure it’s a smooth paste.

5-Finishing Touches: Gradually whisk in the 4 cups whole milk, then season with 1/2 tsp seasoned salt and black pepper to taste. Let it cook until the gravy thickens, which takes about 5 to 10 minutes. If it gets too thick, add a bit more milk and adjust the seasoning as needed. Finally, serve the chicken fried steak with mashed potatoes and pour the white gravy over the top.

Notes

🔥 Ensure oil is hot enough for crispiness; test by sprinkling flour—should sizzle.
🍳 Avoid overcrowding skillet to maintain even crisping.
🥩 Use tenderized cube steak or tenderized round steak for the best texture and flavor.
