Ingredients
– 3 boneless skinless chicken breasts (approximately 1 pound)
– 1 medium onion
– 1 lime
– 3 bell peppers (red, yellow, green, or orange)
– 3 tablespoons olive oil, divided
– 1 teaspoon chili powder
– ¾ teaspoon salt, divided (adjust to taste)
– ½ teaspoon smoked paprika
– ½ teaspoon onion powder
– ½ teaspoon black pepper
– ½ teaspoon cumin (optional)

Instructions
1-Slice the onion into slivers and the bell peppers into strips.
2-In a separate bowl, combine 1 tablespoon olive oil, juice of half the lime, chili powder, smoked paprika, onion powder, black pepper, cumin, and half a teaspoon of salt to make the seasoning blend.
3-Cut the chicken breasts into strips and toss them with the seasoning mixture.
4-Heat 1 tablespoon olive oil in a pan over medium-high heat. Cook half of the chicken for 3 to 5 minutes until just cooked through, then remove and set aside. Repeat with the remaining chicken.
5-Add the last tablespoon of olive oil to the pan. If desired, soak the sliced onions in cold water beforehand to reduce sharpness, then cook the onions in the pan for about 2 minutes.
6-Add the sliced bell peppers and the remaining salt to the pan. Toss and cook for an additional 2 minutes until the peppers are just tender.
7-Return the cooked chicken to the pan, stir to combine all ingredients, and squeeze additional lime juice on top.
8-Serve the chicken fajitas over warm tortillas with preferred toppings such as cheese, lettuce, tomatoes, jalapenos, olives, shredded vegetables, guacamole, or avocado.
