– 2 tablespoons butter
– 1 small yellow onion, diced
– 1/2 cup diced carrots
– 2 ribs celery, diced
– 3 cloves garlic, minced
– 5 cups chicken broth
– 1 teaspoon soy sauce
– 1 teaspoon hot sauce
– 1 1/4 pounds bone-in chicken breast or thighs
– 1 teaspoon dried basil
– 1/2 teaspoon dried parsley
– 1/2 teaspoon oregano
– 1/2 teaspoon thyme
– 1/2 teaspoon mustard powder
– 1/4 teaspoon black pepper
– 1 1/2 cups chicken broth (for cooking the rice)
– 3/4 cup uncooked white long grain rice (or 2 1/4 cups cooked rice)
– Fresh parsley (for garnish)
Instructions
1-Melt 2 tablespoons of butter in a large pot over medium heat.
2-Sauté the diced onion, carrots, and celery for about 4 minutes until they soften, then add the minced garlic and cook for another minute.
3-Stir in the seasonings (1 teaspoon dried basil, 1/2 teaspoon each of dried parsley, oregano, and thyme, 1/2 teaspoon mustard powder, and 1/4 teaspoon black pepper), along with 1 teaspoon soy sauce, 1 teaspoon hot sauce, the chicken, and 5 cups of chicken broth.
4-Bring the mixture to a gentle simmer, partially covered, and cook slowly for 15 to 20 minutes to keep the chicken tender. Once done, remove the chicken, shred it with forks, discard the bones, and return the shredded meat to the soup.
5-For the rice, boil 1 1/2 cups chicken broth in a separate pot, add 3/4 cup uncooked white long grain rice, cover tightly, and reduce heat to a simmer for 15 minutes. Turn off the heat and let it sit covered for another 10 minutes.
6-Serve by placing the cooked rice in bowls, ladling the soup over it, and garnishing with fresh parsley. If you’re not planning leftovers, you can add the rice directly to the soup.
