1 whole chicken (about 4 pounds / ~1.8 kg)
1/4 cup (60 ml) hoisin sauce
1/4 cup (60 ml) fresh orange juice
2 tablespoons (30 ml) soy sauce (preferably low-sodium)
2 tablespoons (30 ml) honey (adjust to taste)
1 tablespoon (15 ml) rice vinegar
3 cloves garlic, minced
1 teaspoon (2 g) grated fresh ginger
1 teaspoon (2 g) orange zest (freshly grated)
Salt and black pepper to taste
2 green onions, sliced for garnish
Sesame seeds for garnish (optional)

Instructions

1. Preheat the oven to 375°F (190°C).
2. In a bowl, thoroughly combine hoisin sauce, fresh orange juice, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and orange zest to create a flavorful glaze.
3. Season the whole chicken inside and out with salt and black pepper.
4. Place the chicken in a roasting pan and generously brush it with the hoisin-orange glaze, reserving some for basting during cooking.
5. Roast the chicken for about 1 hour and 20 minutes, or until an internal temperature of 165°F (75°C) is reached. Baste the chicken every 20 minutes with the reserved glaze to keep the skin moist and flavorful.
6. For extra crispy skin, broil the chicken for the last 3-5 minutes, watching carefully to avoid burning.
7. Allow the chicken to rest for 10 minutes before carving to let the juices redistribute.
8. Garnish with sliced green onions and sesame seeds if desired.
