Ingredients

– 2 tablespoons unsalted butter

– 2½ cups (12 oz) cherries stemmed and pitted

– 3 large eggs

– 1 cup milk (whole or 2%)

– ¼ cup heavy cream

– ½ cup plus 2 tablespoons granulated sugar divided

– ½ cup all-purpose flour spooned and leveled

– ¼ teaspoon salt

– 1 teaspoon vanilla extract

– ⅛ teaspoon almond extract

– confectioners’ sugar for dusting (optional)

Instructions

1-Preheat the oven: Preheat the oven to 375°F and position an oven rack in the middle.

2-Melt the butter: Melt the butter in a 10-inch cast-iron or nonstick ovenproof skillet over medium heat. Swirl the melted butter to coat the sides of the pan. If a skillet is not available, melt the butter in a 2-quart baking dish in the oven.

3-Arrange the cherries: Arrange the pitted cherries evenly in the skillet or baking dish.

4-Blend the batter: In a blender, combine the eggs, milk, cream, ½ cup of sugar, flour, salt, vanilla extract, and almond extract; blend until smooth.

5-Pour the batter: Pour the batter evenly over the cherries.

6-Bake and sprinkle sugar: Bake for 20 minutes; remove from the oven and sprinkle the remaining 2 tablespoons of sugar evenly over the top.

7-Finish baking: Return to the oven and bake for 25 to 30 more minutes, until the clafoutis is golden brown and just set but still slightly jiggly. Insert a toothpick or knife to check; it should come out clean.

8-Cool and serve: Cool on a rack for about 30 minutes. Dust with confectioners’ sugar if desired, and serve warm or at room temperature.
