1 teaspoon salt, divided

Β½ cup unsalted butter, cold and cut into cubes

1 cup shredded cheddar cheese

2 tablespoons sun-dried tomatoes (preferably in oil with herbs)

1 cup milk

ΒΌ cup butter, melted for the topping

1 garlic clove, minced for the topping

1 teaspoon chopped fresh basil for the topping

Instructions

1-Place 1 cup shredded zucchini in a small bowl, sprinkle with ΒΌ teaspoon of the salt, stir, and let it sit for 15 minutes. Rinse well, drain completely, and pat dry with a paper towel to remove excess moisture.

2-In a large mixing bowl, combine 2 Β½ cups all-purpose flour, 1 Β½ teaspoons baking powder, 1 teaspoon garlic powder, and the remaining salt. Cut in Β½ cup cold unsalted butter (cut into cubes) using a pastry cutter or fork until the mixture resembles coarse crumbs.

3-Add the prepared zucchini, 2 tablespoons sun-dried tomatoes, and 1 cup shredded cheddar cheese to the bowl. Stir in 1 cup milk just until the dough is moistened, being careful not to overmix.

4-Use an ice cream scoop to drop mounds of dough onto the prepared baking sheet, spacing them evenly.

5-Bake for 23-25 minutes or until golden brown.

6-For the topping, mix ΒΌ cup melted butter, 1 minced garlic clove, and 1 teaspoon chopped fresh basil. Brush this over the warm biscuits before serving.
