1-First Step: Prepare Oven and Ingredients
Preheat your oven to 200°C (390°F) or 180°C fan-forced (about 400-425°F). Line a baking sheet with parchment paper. Grate the cheese if not pre-shredded, measure all dry ingredients, and cut cold butter into 1 cm cubes ready for mixing.

2-Second Step: Mix Dry Ingredients and Cut in Butter
In a large bowl or food processor fitted with an ā€œSā€ blade, combine the flour, baking powder, and salt. Scatter cold butter evenly over the flour and pulse or rub in with fingertips until the mixture resembles coarse breadcrumbs with pea-sized bits of butter still visible, keeping the butter cold to ensure a flaky texture.

3-Third Step: Add Cheese and Liquid
Mix in 1½ cups (around 150g) of shredded mature cheddar cheese evenly. Slowly pour in ¾ cup (180ml) cold milk and gently fold or pulse just until the dough comes together. Avoid overworking; a shaggy, slightly sticky dough is perfect.

4-Fourth Step: Shape and Cut Dough
Turn dough onto a lightly floured surface (use minimal flour) and gently pat or roll into a 3 cm thick round. For flaky layers, fold the dough in thirds two or three times before final shaping. Brush the top and sides with milk, sprinkle extra shredded cheese over the top, and press lightly to help adhere. Cut into 6 wedges or 8-10 rounds about 5-6 cm diameter, spacing them 2 inches apart on the tray.

5-Final Step: Bake and Serve
Bake for 15-20 minutes until golden and risen. Thinner rounds may take closer to 15 minutes. Cool for 5 minutes and serve warm with butter or herb butter spread on top for an extra flavor boost. These cheese scones are best enjoyed fresh but keep well stored (see storage tips).
