Ingredients

– 2 tsp smoked paprika

– 1 Tbsp olive oil

– 1 Tbsp butter

– 1 lb boneless, skinless chicken breast

– 1 yellow onion

– ½ lb penne pasta

– 15 oz fire-roasted diced tomatoes with juices

– 2 cups chicken broth

– 2 oz cream cheese

– 3 green onions

– grated Parmesan

Instructions

First Step: Prepare Ingredients Dice 1 lb of boneless, skinless chicken breasts into ½ to ¾ inch cubes. Dice 1 yellow onion and slice optional bell peppers if using. Mince 2-3 garlic cloves if desired. Bring a large pot of salted water to boil for cooking pasta.

Second Step: Cook Pasta Boil ½ lb penne pasta until al dente according to package instructions. Drain and set aside, reserving some pasta water if needed later to adjust sauce consistency.

Third Step: Make Cajun Seasoning Blend and Season Chicken Combine 2 tsp smoked paprika, 1 tsp oregano, 1 tsp thyme, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp cayenne pepper, ¼ tsp black pepper, and ¼ tsp salt. Toss chicken cubes evenly in the seasoning blend.

Fourth Step: Brown Chicken Heat 1 Tbsp olive oil and 1 Tbsp butter in a large skillet over medium-high heat until butter foams. Add seasoned chicken and cook for several minutes on each side until browned but not fully cooked. Remove chicken from skillet if desired.

Fifth Step: Sauté Vegetables In the same skillet, add diced onion, bell peppers, and minced garlic; sauté for about 2 minutes until softened. Use the moisture to deglaze the pan, dissolving browned bits for flavor.

Sixth Step: Add Liquids and Pasta Add uncooked penne pasta, 15 oz fire-roasted diced tomatoes with juices, and 2 cups chicken broth to the skillet. Stir to combine, cover, and bring to a boil.

Seventh Step: Simmer and Cook Pasta Reduce heat to medium-low and simmer, uncovered, for 10 minutes. Stir every couple of minutes to prevent sticking and to ensure the pasta is tender and the sauce thickens.

Eighth Step: Add Creaminess and Finish Cooking Chicken Stir in 2 oz cream cheese chunks until melted and incorporated. Return the browned chicken to the skillet (if removed) and cook until fully cooked through. Optional: stir in grated Parmesan cheese for extra richness.

Final Step: Garnish and Serve Sprinkle sliced green onions or chopped parsley on top. Serve immediately, enjoying the creamy, smoky, and spicy flavors melded in this cajun chicken pasta dish.
