Ingredients

– ½ cup (115g) unsalted butter, at room temperature

– ½ cup (100g) firmly packed light brown sugar

– ¼ cup (50g) granulated sugar

– 1 large egg

– 1½ teaspoons vanilla extract

– 1½ cups (180g) all-purpose flour

– ½ teaspoon baking soda

– ¼ teaspoon fine sea salt

– ½ cup (90g) butterscotch morsels

– ½ cup (90g) white chocolate chips

– ¼ cup (64g) creamy peanut butter

– ¼ cup (80g) sweetened condensed milk

– Pinch of salt

Instructions

1-Combine the peanut butter, sweetened condensed milk, and salt in a microwave-safe bowl. Microwave for 20 30 seconds until warm, stir until smooth, then chill in the freezer for 15 20 minutes to firm up but remain scoopable.

2-Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

3-Cream the butter, brown sugar, and granulated sugar in a large bowl for 2 3 minutes until light and fluffy. Add the egg and vanilla extract, mixing until smooth.

4-In a separate bowl, whisk together the flour, baking soda, and salt. Gradually incorporate the dry ingredients into the wet mixture on low speed.

5-Fold in the butterscotch morsels and white chocolate chips gently.

6-Scoop 1½-tablespoon portions of dough, flatten slightly, place 1 teaspoon of chilled fudge filling in the center, then fold dough around the filling, fully sealing. Roll into smooth balls and place on the baking sheets spaced 2 inches apart. Optionally, chill shaped cookies for 10 minutes if the dough feels soft.

7-Bake for 10 12 minutes or until the edges are lightly golden and the centers remain soft.

8-Cool for 5 minutes on the baking sheets before transferring to a wire cooling rack.
