🍔 Juicy and flavorful, this burger recipe ensures mouth-watering patties that are perfect for grilling or stovetop cooking.
🍔 Enjoy a flexible base for creating your own gourmet hamburgers with a variety of toppings and seasonings.

  • Total Time: 25 minutes
  • Yield: 6 patties

Ingredients

– 2 pounds (about 900g) ground chuck beef (80% lean / 20% fat recommended for juiciness)

– ½ cup crushed crackers or Panko breadcrumbs (can be gluten-free)

– 1 large egg

– 2 tablespoons Worcestershire sauce

– 2 tablespoons milk

– 1 teaspoon salt (plus extra for seasoning before cooking)

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– ½ teaspoon freshly ground black pepper (plus extra for seasoning before cooking)

– Medium cheddar cheese slices

– Lettuce leaves

– Tomato slices

– Pickle slices

– Red onion rings

– Condiments such as mayonnaise, mustard, ketchup, BBQ sauce

Instructions

1-Step 1: Prepare Your Ingredients

  • Measure 2 pounds (about 900g) of ground chuck beef with 80% lean and 20% fat for optimal juiciness.
  • Gather ½ cup crushed crackers or Panko breadcrumbs (gluten-free if preferred).
  • Prepare 1 large egg, 2 tablespoons Worcestershire sauce, and 2 tablespoons milk.
  • Have your seasonings ready: 1 teaspoon salt, 1 teaspoon garlic powder, 1 teaspoon onion powder, and ½ teaspoon freshly ground black pepper.
  • Optional toppings such as cheddar cheese slices, lettuce, tomato, pickles, and condiments.

2-Step 2: Mix and Form Patties In a large mixing bowl, combine the ground beef, crushed crackers or breadcrumbs, egg, Worcestershire sauce, milk, salt, garlic powder, onion powder, and black pepper. Mix gently by hand until evenly combined, making sure not to overmix this prevents tough patties. Shape the mixture into evenly sized patties, about 1/3 pound (150g) each. Make them roughly 1 inch wider than your buns to allow for shrinkage during cooking. Press a small indentation in the center of each patty to avoid puffing up.

3-Step 3: Season Just Before Cooking Just before placing the patties on the grill or skillet, season both sides with additional salt and freshly ground black pepper. This step locks in moisture and flavor.

4-Step 4: Preheat and Cook Preheat your grill or skillet to medium heat, aiming for 350-400° F (175-200° C). Place the patties on the hot surface without pressing down on them to retain their juices.

  • Thick patties: Cook for 3-5 minutes per side, flipping once or twice.
  • Thin patties: Cook approximately 2 minutes per side.

Use a meat thermometer to check the internal temperature, aiming for 155-160° F (68-71° C) for safe consumption.

5-Step 5: Add Cheese and Toast Buns If using cheese, add a slice during the last 1-2 minutes of cooking and cover to melt it perfectly. Toast hamburger buns lightly by spreading butter on the cut sides and placing them on the grill or skillet until golden brown. This prevents sogginess and adds flavor.

6-Step 6: Assemble Your Burger Layer your burger hot with preferred toppings such as lettuce leaves, tomato slices, pickle slices, red onion rings, and condiments like mayonnaise, mustard, ketchup, or BBQ sauce. Serve immediately for the best taste and juiciness.

Notes

🧀 Using crushed crackers instead of plain breadcrumbs adds extra flavor and traps juices better.
🌶 Customize your seasoning with additional spices such as red pepper flakes, cumin, or chili powder according to taste.
🚫 Avoid overmixing to keep patties tender and juicy.
