8 ounces rotini pasta
1 ½ cups cooked shredded chicken
⅓ cup diced red bell pepper
⅓ cup diced celery (optional)
¼ cup diced scallions or green onions
½ cup buffalo sauce
½ cup ranch dressing
2 tablespoons mayonnaise (optional) or ¾ cup sour cream
¼ teaspoon garlic powder
¼ teaspoon onion powder (optional)
¼ teaspoon celery salt (optional)
1 cup shredded mozzarella cheese or ½ to 1 cup crumbled blue cheese
Instructions
1. Cook pasta according to package instructions until al dente. Drain and rinse with cold water if serving chilled.
2. In a bowl, whisk together buffalo sauce, ranch dressing, mayonnaise or sour cream, garlic powder, onion powder, and celery salt.
3. In a large bowl, combine cooked pasta, chicken, red bell pepper, celery, and green onions.
4. Pour dressing over the pasta mixture and stir until well combined.
5. Stir in mozzarella cheese while pasta is warm to melt slightly or gently fold blue cheese.
6. Chill in the refrigerator for at least 2 hours if serving cold or serve warm immediately.
