Ingredients
– 8 cups rice cereal, corn cereal, or a combination (240 g)
– 2 cups chocolate chips (240 g)
– 1 1/2 cups peanut butter (270 g)
– 3/4 cup butter (190 g)
– 4 tablespoons butter or add a pinch of salt if using unsalted butter (57 g)
– 1 teaspoon vanilla extract (5 ml)
– 2 cups powdered sugar (divided into 2 bags with 1 cup each)
Instructions
1-First, measure the cereal into a large bowl and set it aside.
2-Next, divide the powdered sugar between two sealable plastic bags, putting 1 cup in each, and set them aside.
3-In a saucepan over medium-low heat, melt the chocolate chips, 3/4 cup butter, peanut butter, and a pinch of salt if using unsalted butter, stirring until smooth and melted without overheating.
4-Remove the mixture from the heat and stir in the vanilla extract.
5-Pour the melted mixture over the cereal and stir to coat evenly, then let it cool for a few minutes.
6-Divide the coated cereal between the two sealable plastic bags with the powdered sugar, seal the bags, and shake to coat the cereal thoroughly.
7-Finally, store the Buddy Mix in an airtight container for up to 1 week at room temperature or freeze for up to 2 months.
