3 cups packed (600g) light brown sugar
1½ cups (350ml) heavy cream, evaporated milk, or regular milk
2 large eggs, beaten
1/4 cup (40g) all-purpose flour
1/4 teaspoon salt
1 tablespoon vanilla extract or 1/4 teaspoon lemon extract
1 tablespoon unsalted butter or margarine, melted (optional)
1 9-inch deep dish pie crust (homemade or store-bought)
Heavy cream or egg and milk mixture for brushing the crust (optional)
Optional Garnish:
1 cup whipped cream
Pure maple sugar flakes or butter pecan ice cream

Instructions

1. Preheat oven to 350°F (175°C).
2. Roll out the pie dough, grease a pie pan, and press the crust into it. Optionally brush with heavy cream or an egg and milk wash for a golden crust.
3. In a large bowl, gently combine the brown sugar and flour.
4. Add your choice of cream, evaporated milk, or regular milk, and stir gently until smooth, avoiding the incorporation of froth.
5. Carefully stir in beaten eggs with a wooden spoon or whisk to prevent air bubbles.
6. Add salt and vanilla or lemon extract. Mix well and, if desired, incorporate melted butter for added richness.
7. Let the mixture rest at room temperature for 30 minutes to relax gluten and fully dissolve sugar for a smoother filling.
8. Pour the filling into the prepared crust.
9. Bake on the middle rack for 50 to 60 minutes until the filling is set and the top is golden brown with no jiggle when gently shaken. Cover edges with foil if they brown too quickly.
10. Turn off the oven and leave the door slightly open to cool the pie safely.
11. Transfer the pie to the refrigerator to chill completely, allowing the filling to firm up.
12. Serve chilled or slightly warmed, garnished with whipped cream or maple sugar flakes if desired.
