Instructions

2-In a medium bowl, mix together the flour, baking soda, and salt until well combined.
3-In a stand mixer, beat the butter on medium speed until creamy, about 1 minute, then add the brown sugar and molasses, beating until light and fluffy for 2 to 3 minutes.
4-Add the egg, egg yolk, and vanilla extract; beat until everything is fully mixed.
5-Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined to keep the dough tender.
6-Place the granulated sugar in a bowl, form the dough into 1 1/2 ounce balls (about 2 tablespoons each), roll them in the sugar, and place 8 per sheet pan.
7-Bake one sheet at a time, rotating halfway through, for 10 to 11 minutes until the sides are set and bottoms are light golden brown. Cool on the pan for 5 to 10 minutes before moving to a wire rack.
