🍪 These Chewy Brown Sugar Cookies deliver a soft, fudgy center with a crackled, sparkling sugar-coated surface that everyone will enjoy.
🧈 Featuring brown sugar and molasses, they bring rich, sweet flavors and a perfect chewy texture for a comforting treat.

  • Total Time: 26 minutes
  • Yield: 24 cookies

Ingredients

– 2 1/2 cups plus 1 tablespoon all-purpose flour Provides structure and base for the dough

– 3/4 teaspoon baking soda

– 3/4 teaspoon salt

– 1 cup unsalted butter at room temperature Adds creaminess and helps with texture

– 1 3/4 cup packed brown sugar Brings moisture and rich flavor

– 1 teaspoon molasses

– 1 large egg plus 1 large egg yolk

– 2 teaspoons pure vanilla extract

– 1/2 cup granulated sugar for rolling

Instructions

1-Preheat your oven to 350°F and line three sheet pans with parchment paper to make cleanup easy.

2-In a medium bowl, mix together the flour, baking soda, and salt until well combined.

3-In a stand mixer, beat the butter on medium speed until creamy, about 1 minute, then add the brown sugar and molasses, beating until light and fluffy for 2 to 3 minutes.

4-Add the egg, egg yolk, and vanilla extract; beat until everything is fully mixed.

5-Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined to keep the dough tender.

6-Place the granulated sugar in a bowl, form the dough into 1 1/2 ounce balls (about 2 tablespoons each), roll them in the sugar, and place 8 per sheet pan.

7-Bake one sheet at a time, rotating halfway through, for 10 to 11 minutes until the sides are set and bottoms are light golden brown. Cool on the pan for 5 to 10 minutes before moving to a wire rack.

Notes

🍳 Do not skip the egg yolk; it’s key for a fudgy, rich center.
❄️ Avoid chilling the dough for the classic crackled top texture.
🧈 Use room temperature butter (not overly soft) to prevent excessive spreading.
