1 garlic clove

1/4 cup unrefined cold-pressed extra-virgin olive oil

1 tablespoon freshly squeezed lemon juice

Instructions

1-First, prepare the broccoli: If using frozen, defrost 2 cups of chopped broccoli. If fresh, blanch 2 cups of broccoli florets in salted water for 3 to 4 minutes, then submerge in ice water, drain, and pat dry.

2-Gather the rest of the ingredients: You’ll need 1 cup fresh basil leaves, 1/2 cup grated Parmesan or a similar cheese, 1 garlic clove, 1/4 cup unrefined cold-pressed extra-virgin olive oil, 1 tablespoon freshly squeezed lemon juice, and sea salt to taste.

3-In a food processor, combine the prepared broccoli, basil, cheese, and garlic. Process until everything is finely chopped for a smooth base.

4-While the motor runs, slowly add the olive oil and lemon juice until the mixture emulsifies into a creamy dip.

5-Adjust the consistency with a little cooking or pasta water if it’s too thick, then season with salt and pepper to taste.

6-Finally, transfer the dip to a bowl and serve right away or chill it for later.
