Ingredients

– 1 1/4 cups uncooked white long grain rice for texture

– 2 1/2 cups chicken broth for cooking liquid

– Salt and pepper to taste

– Optional: 10.5 oz condensed cheddar cheese soup for richer flavor

Instructions

First Step: Prep and Preheat Preheat your oven to 350°F (175°C) if using uncooked rice, or 375°F (190°C) if using cooked chicken and soups only. Dice the chicken breasts into bite-sized pieces or shred rotisserie chicken. Wash and cut broccoli into florets. Chop onions finely. Measure out rice and chicken broth.

Second Step: Cook Chicken (if raw) Heat 2 tablespoons of butter or olive oil in a large pot over medium heat. Season chicken with Italian seasoning, salt, and pepper. Cook until browned and no longer pink inside, about 5 minutes. Remove chicken to a plate. If using pre-cooked or rotisserie chicken, skip this step.

Third Step: Cook Rice and Broccoli In the same pot, add chicken broth, olive oil if desired, and uncooked rice. Bring to a boil. Reduce heat and cover tightly, simmering for 6 minutes. Add broccoli florets, cover, and cook another 9 minutes or until rice is tender and liquid absorbed. Keep covered off heat for 10 minutes for fluffier rice.

Fourth Step: Combine Ingredients Return chicken to the pot. Add condensed cream of chicken soup, optional cheddar cheese soup, sour cream or mayonnaise, half of shredded cheddar cheese, and any optional seasonings like thyme or garlic powder. Mix thoroughly until well combined.

Fifth Step: Assemble Casserole Lightly grease a 9×13-inch baking dish. Transfer the mixture evenly into the dish. Sprinkle the remaining shredded cheddar cheese over the top for a cheesy crust.

Sixth Step: Prepare Topping and Bake Mix crushed crackers with melted butter. Sprinkle evenly over the cheese layer. Cover with foil loosely and bake for 15 minutes (or 30-35 minutes for cooked ingredient versions at 375°F). Remove foil and bake uncovered for another 10 minutes, until topping is golden and cheese bubbly.
