πŸ₯¦ This Broccoli Caesar Pasta Salad combines crisp broccoli and creamy Caesar dressing for a refreshing and nutritious meal.
πŸ§€ Perfectly balanced with crispy croutons and tender pasta, it’s great for lunch or a light dinner option.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

– 8 oz pasta (any short pasta like penne or fusilli)

– 1 head of broccoli (either raw or quickly blanched and chopped)

– 1 avocado (chopped)

– 1 cup of breadcrumbs

– 2 tablespoons of butter

– Green onions (sliced, amount to taste, typically 2-3 stalks)

– Basil (chopped, about 1/4 cup fresh leaves)

– Finely grated parmesan cheese for garnish (about 1/2 cup)

– Extra breadcrumbs for garnish (about 1/4 cup)

– 1/2 cup mayonnaise or Greek yogurt (or a combination of both)

– 2 tablespoons olive oil

– 1 finely minced or grated garlic clove

– Juice of 1 lemon

– 1 teaspoon Dijon mustard

– 2 teaspoons Worcestershire sauce or anchovy paste

– 1/2 cup finely grated Parmesan cheese

– Salt and black pepper to taste

Instructions

1-Prepare all ingredients by washing and cutting the broccoli into florets, halving cherry tomatoes, and measuring out pasta and dressing.

2-Cook the pasta in salted boiling water according to package instructions until al dente, then drain and rinse under cold water to stop cooking.

3-Blanch the broccoli florets in boiling water for 1-2 minutes to preserve crunch, then plunge into ice water to keep their bright green color.

4-In a large bowl, combine the cooled pasta and broccoli with cherry tomatoes, adding the Caesar dressing and tossing gently to coat all ingredients evenly.

5-Sprinkle grated Parmesan cheese over the salad and drizzle with olive oil for extra flavor.

6-Chill the salad in the refrigerator for at least 30 minutes before serving to allow flavors to meld; adapt the dressing and pasta type as needed for vegan, gluten-free, or low-calorie preferences.
