Ingredients
500 ml (2 cups) water (warm or room temperature)
2 tablespoons dried butterfly pea flowers (optional for color and antioxidants)
1 tablespoon raw apple cider vinegar with the “mother”
Juice of 1 lemon (about 1 lemon or 1/2 for a milder taste)
1 teaspoon fresh ginger slices or 1/2 teaspoon freshly grated ginger
1 teaspoon honey or other sweetener like agave syrup, maple syrup, or stevia (optional)
Instructions
1. Boil or warm 500 ml of water in a saucepan. If using fresh ginger slices, add them while heating.
2. Remove from heat and steep 2 tablespoons of dried butterfly pea flowers separately for about 10 minutes.
3. In a glass or pitcher, combine the warm water, apple cider vinegar, lemon juice, and optional honey. Stir well.
4. Observe the color change as the lemon juice turns the infusion from blue to purple.
5. Serve immediately hot or allow to cool and pour over ice for a refreshing drink.
