1 teaspoon rice wine

1 teaspoon soy sauce

1 teaspoon sesame oil

1 teaspoon julienned ginger

3 tablespoons oyster sauce

1 teaspoon soy sauce

1 teaspoon freshly ground black pepper

1/4 teaspoon sugar

Pinch of salt

1 teaspoon cornstarch

3 tablespoons water

2 tablespoons cooking oil

1 onion, julienned

1/2 red bell pepper, julienned

Instructions

1-First, prepare all ingredients as outlined. Slice 350 grams of flank or skirt steak against the grain for tenderness, then mix it with the marinade: 1 teaspoon each of cornstarch, rice wine, soy sauce, sesame oil, and julienned ginger. Let it rest for 10 minutes to soak in those flavors.

2-Next, in a separate bowl, combine the sauce ingredients: 3 tablespoons oyster sauce, 1 teaspoon soy sauce, 1 teaspoon freshly ground black pepper, 1/4 teaspoon sugar, a pinch of salt, 1 teaspoon cornstarch, and 3 tablespoons water.

3-Heat 2 tablespoons of cooking oil in a wok over high heat until it’s shimmering. Add the marinated beef and sear it until browned but still pink inside, which should take about 1-2 minutes. Remove the beef and set it aside on a plate. In the same wok, stir-fry the julienned onion and 1/2 red bell pepper for a minute or two until they’re tender-crisp, keeping that fresh crunch.

4-Return the beef to the wok with the vegetables and stir-fry for another 1-2 minutes. Pour in the prepared sauce and stir constantly until it thickens and coats everything evenly. For an extra kick, sprinkle in more freshly ground black pepper before serving hot with steamed rice.
