Instructions
Prepare black beans: Rinse and drain 2 cups of cooked black beans thoroughly to reduce excess sodium and prepare for blending.
Sauté aromatics: Heat ¼ cup extra virgin olive oil in a small saucepan over medium heat. Add 2 small chopped yellow onions, 4 cloves peeled garlic (chopped into large chunks), and 1–2 medium seeded and chopped jalapeño peppers. Cook until onions are very soft, about 10 minutes, ensuring garlic doesn’t brown.
Blend ingredients: Transfer the sautéed mixture to a food processor. Add the rinsed black beans, 1½ teaspoons salt, ½ teaspoon ground cumin, 1 teaspoon chili powder (optional), 2 tablespoons fresh lime juice, 3 tablespoons water, and ¼ cup fresh chopped cilantro.
Process dip: Blend until almost smooth, stopping to stir the mixture if necessary. Adjust consistency by adding more water or lime juice gradually until the desired thickness is reached.
Season and chill: Taste and adjust seasonings accordingly. Transfer the dip to a bowl, cover, and refrigerate for at least 30 minutes to let flavors meld.
Serve: Serve the black bean dip warm, cold, or at room temperature with tortilla chips, fresh vegetables, or crackers. Garnish with additional cilantro and cotija cheese if desired.
