🍓 Easy Berry Cake with a Sweet Crumb Topping offers a delightful mix of juicy berries and a crunchy, flavorful topping.
🍋 This recipe is simple to make and perfect for a sweet treat that balances fresh fruit and crumbly goodness.

  • Total Time: 1 hour
  • Yield: 12 servings 1x

Ingredients

Scale

3 large eggs, room temperature

1 cup sugar

1/4 cup olive oil

2 cups all-purpose flour, measured correctly

2 1/2 teaspoons baking powder

1 tablespoon lemon zest from 1 large lemon

1 teaspoon vanilla extract

1/3 cup seltzer water or club soda

10 ounces mixed berries (about 2 cups), including hulled and halved strawberries, whole blueberries, and blackberries

3/4 cup all-purpose flour

1/4 cup sugar

4 tablespoons unsalted butter, softened

1/4 teaspoon salt

Instructions

1-Begin by preheating the oven to 350 degrees Fahrenheit and preparing a 9-inch springform pan by buttering the bottom, lining it with parchment paper, and lightly greasing the sides. In a mixing bowl, beat the eggs and sugar on high speed for 5 minutes until thick and pale, then stir in the olive oil for a smooth mixture.

2-Next, in a separate bowl, whisk together the flour and baking powder. Add half of this dry mixture to the batter and mix on low speed just until combined, followed by the lemon zest and vanilla extract. Slowly mix in the seltzer water or club soda on low speed, avoiding overmixing, then incorporate the remaining flour mixture.

3-Transfer the batter to the prepared pan and spread it evenly, then evenly distribute the mixed berries over the top. For the crumb topping, combine the flour, sugar, salt, and butter in a bowl and rub together with your fingertips until coarse crumbs form, then sprinkle it over the cake. Bake for 45 to 50 minutes until golden brown and a toothpick inserted in the center comes out clean, taking care not to overbake.

🍇 Use fresh berries for best results; if frozen, coat in flour and extend baking by 5-10 minutes.
🔥 Ensure oven is preheated fully, avoid opening door during baking, and use correct pan size.
🌡️ Check oven temperature with a thermometer as ovens vary; test doneness with a toothpick.
