Instructions
1-First, season 2 to 3 pounds of beef roast with salt and pepper, then sear it in 2 tablespoons of oil over medium heat until browned on all sides.
2-Next, add the seared beef to a pot with 8 cups of low sodium beef broth, 1 envelope of onion soup mix, Β½ teaspoon crushed dried rosemary, ΒΌ teaspoon dried thyme, and 3 to 4 cloves of minced garlic; bring to a simmer and cook for about an hour.
3-After simmering, stir in 10.5 ounces of canned mushroom soup, 2 peeled and chopped large carrots, and 2 chopped celery ribs; continue cooking for 20 minutes until the vegetables are tender.
4-Then, add 24 ounces of good quality egg noodles and cook for 5 to 10 minutes until they are tender and fully incorporated into the soup.
5-Finally, stir in optional parsley for a fresh garnish and serve hot. For an extra tip, consider browning the beef well to enhance the flavor, as I love to pair this soup with crusty bread for a complete meal.
