Ingredients
– 1 lb. ground beef (85% lean)
– 1.5 teaspoons Italian seasoning
– Salt and pepper to taste
– 3 tablespoons butter, divided
– ΒΎ cup diced onions
– 1 tablespoon minced garlic
– 2 Β½ cups beef broth
– 1 ΒΌ cups uncooked white long grain rice (not instant rice)
– 8 oz. sliced button mushrooms, washed
– 10.5 oz. cream of mushroom soup
– Β½ cup milk (any kind)
– Β½ cup sour cream
– 2 cups cheddar cheese, divided
Instructions
1-Step 1: Preheat the oven to 350 degrees and gather your ingredients to make things flow smoothly.
2-Step 2: Brown the 1 lb. of ground beef in a large pot over medium-high heat, adding salt, pepper, and 1.5 teaspoons of Italian seasoning. Once done, drain the excess grease and set the beef aside, covered with foil to keep it warm.
3-Step 3: In the same pot, melt 2 tablespoons of the butter and cook the ΒΎ cup of diced onions until they soften, then add the 1 tablespoon of minced garlic and cook for another minute.
4-Step 4: Stir in the 2 Β½ cups of beef broth, the remaining 1 tablespoon of butter, and the 1 ΒΌ cups of uncooked white long grain rice. Bring to a boil, reduce to a simmer, cover tightly, and cook for 10 minutes.
5-Step 5: Add the 8 oz. of sliced button mushrooms, replace the cover, and cook for another 5-10 minutes without stirring. Turn off the heat and let it stand covered for 10 minutes.
6-Step 6: Mix in the cooked ground beef, 10.5 oz. of cream of mushroom soup, Β½ cup of milk, Β½ cup of sour cream, and half of the 2 cups of cheddar cheese.
