Ingredients

2 slabs beef ribs (or about 6 beef short ribs, each 300–350g)
2 to 4 tablespoons olive oil
2 tablespoons dark brown sugar
2 teaspoons paprika
1 teaspoon dry mustard or mustard powder
1 teaspoon garlic powder (or 2 fresh garlic cloves, minced)
1 teaspoon onion powder
1/2 teaspoon cumin powder
1 to 1 1/2 teaspoons salt
1 teaspoon black pepper
1 tablespoon Cajun seasoning (optional)
2 teaspoons oregano (optional)
Liquid smoke (optional)
1/4 to 1/2 cup apple cider vinegar
1 to 1 1/2 cups ketchup or tomato sauce
5 tablespoons to 1/2 cup brown sugar
2 teaspoons black pepper
2 teaspoons onion powder
2 tablespoons yellow mustard powder
1 teaspoon cayenne pepper
1 cup apple juice or water
1 tablespoon Worcestershire or soy sauce (optional)

Instructions

1. Remove membrane from ribs and trim excess fat. Rinse and dry thoroughly.
2. Rub ribs with olive oil and liquid smoke if using.
3. Mix rub ingredients and apply evenly to ribs. Marinate in refrigerator for 1 to 3 hours.
4. Mix barbecue sauce ingredients, adjusting with water or apple juice as needed.
5. For oven: Preheat to 325°F (160°C). Bake ribs meat side down, covered, for 2 to 3 1/2 hours.
6. Remove foil, brush with sauce, and bake uncovered for 30 to 60 minutes.
7. For grilling: Preheat to 275°F. Cook ribs on indirect heat for 2 hours, basting in last 10–20 minutes.
8. Check internal temperature, ensuring around 200°F, or test doneness by pulling meat from bone.
9. Rest ribs briefly and serve warm with extra sauce and optional garnishes.
