Getting ready to bake this banana pecan cake is like starting a fun adventure in your kitchen. Begin by preheating your oven to 350°F and greasing a 9 x 13 baking dish for even cooking. This simple step sets the stage for a cake that’s moist and full of flavor.

Next, in one bowl, whisk together the 3 cups all-purpose flour, 1½ teaspoons baking soda, and ½ teaspoon salt; set it aside for later. In another bowl, mix the mashed 4 large very ripe bananas with 3 tablespoons lemon juice and zest of 1 lemon (or 4 tablespoons fresh orange juice plus zest of 1 orange) to add brightness and moisture.
