Ingredients
– 2 medium overripe bananas [mashed to equal 1 cup]
– 1 cup old-fashioned oats or 3/4 cup packed oat flour
– 1/2 teaspoon baking powder [fresh, 6 months or less old]
– 1 tablespoon water [optional]
– 1 teaspoon vanilla extract [optional add-in]
– 1 tablespoon maple syrup [optional, for sweeter muffins]
– 1/4 teaspoon salt [optional add-in]
– 1/3 – 1/2 cup dark chocolate chips [optional add-in]
– 1/2 cup blueberries [optional add-in]
– 1/3 – 1/2 cup chopped walnuts [optional add-in]
Instructions
1-Preheat oven to 350°F (176°C).
2-If using old-fashioned oats, blend them in a food processor for 1-2 minutes until fine to make oat flour. If using oat flour directly, skip this step.
3-Mash the overripe bananas in a medium mixing bowl until completely lump-free. Measure to ensure you have exactly 1 cup.
4-Add the oat flour and baking powder to the mashed bananas. Mix gently.
5-Stir in the optional water, vanilla extract, and salt if using. Do not overmix the batter. Let the batter sit for 5 minutes.
6-Gently fold in any desired optional add-ins like chocolate chips, blueberries, or walnuts, or sprinkle them on top of the batter in the muffin tins before baking.
7-Grease a muffin pan. Portion approximately 1/4 cup of batter into each of 6 muffin tins for smaller muffins. Alternatively, create 3 larger muffins.
8-Bake for 16-18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
9-Allow the muffins to cool in the pan for 5 minutes. Then, carefully remove them from the pan and transfer to a cooling rack to cool for another 10 minutes.
