Instructions
1-Preheat the oven to 425Β°F. Prepare a muffin pan by spraying with nonstick spray or lining with cupcake liners.
2-In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3-In a large bowl or using a stand mixer, mash the bananas. Mix in melted butter, brown sugar, egg, vanilla extract, and milk until combined.
4-Add the dry ingredients to the wet ingredients and stir until just combined. Fold in optional nuts or chocolate chips if desired.
5-Fill muffin cups to the top with batter; this helps them rise better and improves the overall texture.
6-Bake at 425Β°F for 5 minutes, then reduce the temperature to 350Β°F and bake for an additional 16 18 minutes, or until a toothpick inserted in the center comes out clean. Total baking time is roughly 21 23 minutes. For mini muffins, bake straight at 350Β°F for 12 14 minutes. Note that baking times may vary, so using an oven thermometer is a good idea for accuracy.
7-Cool muffins in the pan for 5 minutes before transferring to a wire rack to cool completely.
