Ingredients

– 1 small overripe banana, mashed (about 1/4 cup)

– 1/2 cup vegetable oil or melted butter

– 1 cup light brown sugar, packed

– 1 egg yolk

– 1 teaspoon vanilla extract

– 1 1/3 cups all-purpose flour

– 1/2 teaspoon baking soda

– 2 teaspoons ground cinnamon

– 1/2 teaspoon salt

– 2/3 cup chocolate chips

Instructions

1-In a large bowl, combine the melted butter or oil, brown sugar, and mashed banana. Mix well to blend the flavors.

2-Add the egg yolk and vanilla extract, and mix thoroughly until the mixture is smooth and combined.

3-Stir in the flour, salt, baking soda, and cinnamon until just combined, making sure no streaks of flour remain to keep the texture light.

4-Fold in the chocolate chips. Then, cover the dough and let it sit for about 15 minutes while you preheat the oven to 350 degrees Fahrenheit.

5-Line a baking sheet with parchment paper and scoop 1-inch dough balls onto it, spacing them 2 inches apart. Keep in mind the dough will be a bit wet, which is normal.

6-Bake for 10 to 11 minutes, until the edges are set and the cookies have puffed up, but the centers stay slightly underbaked. Let them cool on the sheet before enjoying.
