Ingredients

– 3 very ripe bananas (medium/large)

– ½ cup unsalted butter (8 tablespoons) at room temperature

– ¾ cup sugar (or honey as a substitute)

– 2 large eggs (lightly beaten)

– 1 ½ cups flour

– 1 teaspoon baking soda

– ½ teaspoon salt

– ½ teaspoon vanilla extract

– 1 cup toasted walnuts (optional)

– ½ cup raisins (optional)

Instructions

1-Preheat and prep pan: Set oven to 350°F (175°C). Grease and flour a loaf pan (9.25 inches long, 5.25 inches wide, 2.75 inches deep). Dark metal pans bake faster, so check early.

2-Toast nuts if using: Roast 1 cup walnuts on a skillet, stirring to avoid burning. Chop and cool.

3-Cream wet base: In a bowl, mix softened butter and sugar (or honey). Mash 3 bananas to chunky consistency, add with beaten eggs. Blend well.

4-Combine dry: Whisk 1 ½ cups flour, 1 tsp baking soda, ½ tsp salt in another bowl. Fold into wet mix.

5-Add flavors: Stir in ½ tsp vanilla, walnuts, and ½ cup raisins if desired. Avoid overmixing for tender crumb.

6-Bake: Pour into pan. Bake 55-60 minutes until toothpick clean. Rest 10 minutes in pan, then cool on rack.
