Ingredients
2 cups all-purpose flour plus 1 tablespoon for coating blueberries
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup granulated sugar
1/4 cup softened butter
1 cup mashed ripe bananas
2 eggs
1/3 cup vanilla or plain yogurt
1 teaspoon vanilla extract
1 1/2 cups fresh blueberries (plus extra for topping; frozen can be used but may cause color streaking)
Instructions
1-First: preheat your oven to 350Β°F (175Β°C) and lightly grease an 8 1/2 x 4 1/2-inch loaf pan with cooking spray. In a medium bowl, combine 2 cups of flour, baking soda, and salt to get your dry ingredients ready. Next, in a larger bowl, beat the sugar and softened butter on medium speed until itβs fluffy, which takes about 1 minute, creating a creamy base for the batter.
2-Then, add the mashed ripe bananas, eggs, yogurt, and vanilla extract to the butter mixture, and beat until everything is fully combined for that signature moisture. Gradually add the flour mixture and beat on low speed just until moist, being careful not to overmix. Toss the blueberries with the remaining 1 tablespoon of flour to prevent them from sinking, then gently fold them into the batter for even distribution.
3-Spoon the batter into your prepared loaf pan, smoothing the top with a spatula, and press some extra blueberries on top for a decorative touch. Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean, checking around 60 minutes to avoid overbaking. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely, making it easier to slice and serve.
