🐟 Flaky baked cod swims in zesty lemon garlic butter – lean, high-protein seafood with vibrant citrus punch!
🍋 Effortless 30-minute oven bake yields juicy results, perfect for healthy dinners or meal prep.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

– 1 1/2 pounds cod loin fillet

– 2 tablespoons olive oil

– 4 tablespoons lemon juice from 1 to 2 lemons

– 4 cloves garlic, minced

– Salt and pepper, to taste

– 1/4 cup butter, diced

– 1 small lemon, sliced

– Chopped parsley, optional

Instructions

1-First Step: Prep the oven and baking dish Start by preheating your oven to 400°F. Lightly grease a rectangular baking dish so the fish does not stick. This is also a good time to pat the cod dry with paper towels and season it lightly with salt and pepper. Dry fish browns and bakes better than wet fish, so do not skip this part.

2-Second Step: Place the cod in the dish Arrange the cod loin fillet in a single layer in the prepared baking dish. If the fillet is large, make sure it has enough room around it so the heat can circulate evenly. This helps the fish cook at the same pace from edge to center.

3-Third Step: Mix the lemon garlic sauce In a small bowl, whisk together 2 tablespoons olive oil, 4 tablespoons lemon juice, and 4 minced garlic cloves. Add salt and pepper to taste. This simple sauce brings the main flavor to the dish, and it only takes a minute or two to mix.

4-Fourth Step: Pour the sauce over the fish Spoon or pour the lemon garlic mixture evenly over the cod. Try to coat the surface well so every bite gets a little citrus and garlic flavor. If you want a stronger garlic taste, keep the full 4 cloves. If you prefer it softer, use a little less.

5-Fifth Step: Add the butter and lemon slices Sprinkle the diced butter over the top of the fish. Then place the sliced lemon over and around the cod. The butter melts into the sauce as the fish bakes, while the lemon slices add a fresh look and a gentle citrus aroma.

6-Sixth Step: Bake until flaky Place the dish in the oven and bake for 15 to 20 minutes. The exact time depends on the thickness of the fillet. The cod is ready when it looks opaque and flakes easily with a fork. For the safest result, the internal temperature should reach 145°F at the thickest part.

7-Seventh Step: Finish and serve Once the fish is done, remove it from the oven and let it rest for a minute or two. Sprinkle with chopped parsley if you like. Serve it warm with your favorite side dishes, and spoon some of the buttery lemon sauce from the pan over the top.

Notes

🐟 Use cod loin for juiciest results; check doneness at 145°F to keep moist and flaky.
🍋 Fresh lemon juice is best; skip slices if worried about bitterness.
🥦 Bake quick veggies alongside for a complete one-pan healthy meal.
