Ingredients

1 cup corn kernels

6 oz lean bacon, cooked and chopped

1/4 cup chives, chopped

2 tbsp dill, chopped

2 hard-boiled eggs

3 tbsp freshly squeezed lemon juice for the dressing

3 tbsp olive oil for the dressing

1 tsp salt for the dressing

1/8 tsp black pepper for the dressing

Instructions

1-Place diced or shredded chicken into a large mixing bowl.

2-Add avocado pieces, corn, chopped bacon, chives, and dill.

3-In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.

4-Drizzle the dressing over the salad and toss gently.

5-Serve immediately, with hard-boiled eggs if desired.
