🍲 Arroz Caldo is a comforting Filipino chicken rice porridge that’s warm, hearty, and perfect for soothing the soul.
🍛 Combining jasmine and sweet rice creates a creamy, flavorful dish enriched with ginger, garlic, and traditional toppings for a satisfying meal.

Ingredients

– 2 lbs chicken, cut into serving pieces (bone-in preferred for flavor, but boneless can be used)

– 3/4 cup jasmine rice

– 3/4 cup sweet rice (glutinous rice)

– 2 chicken bouillon cubes for seasoning

– 34 ounces water

– 8 cloves garlic, chopped and toasted

– 3 onions, chopped (yellow or white)

– 8 hard-boiled eggs, peeled

– 1 cup green onions, chopped

– 3 thumbs ginger, julienned

– 1 tablespoon safflower for color and vibrance

– 1 teaspoon turmeric powder for yellowish color

– Fish sauce to taste

– Ground black pepper to taste

– 5 tablespoons cooking oil

Instructions

1-Heat 5 tablespoons cooking oil in a wok and slow fry 8 cloves chopped garlic until golden brown; remove and set aside.

2-Sauté 3 chopped onions in the remaining garlic-infused oil until softened.

3-Add 3 thumbs julienned ginger and sauté for 1 minute.

4-Add 2 lbs chicken pieces and sauté until lightly browned; pour in fish sauce and stir.

5-Add 3/4 cup jasmine rice and 3/4 cup sweet rice, sauté for 30 seconds to coat the grains.

6-Pour in 34 ounces water and cover; bring to a boil.

7-Add 2 chicken bouillon cubes and reduce heat to simmer; cook for 35 to 50 minutes, stirring every 3 to 5 minutes to prevent sticking and to allow the rice to break down and thicken.

8-Stir in 1 teaspoon turmeric powder and 1 tablespoon safflower.

9-Season with fish sauce and ground black pepper to taste.

10-Add 8 boiled eggs, toasted garlic, and 1 cup chopped green onions as toppings.

11-Serve hot with additional toasted garlic, green onions, and condiments such as calamansi and fish sauce.
