  • Total Time: 6 hours (including cooling)
  • Yield: Serves about 12 to 16 1x

Ingredients

Scale

4 cups all-purpose flour

1 and 1/2 teaspoons salt

1 teaspoon granulated sugar

1 and 3/4 cup unsalted butter (very cold and cubed)

3/4 cup very cold ice water

1 large egg for egg wash, beaten with 1 tablespoon milk

coarse sugar for sprinkling

10 cups peeled and chopped apples (about 4 to 5 lbs, using a mix of sweet and tart varieties)

2/3 cup granulated sugar

1/4 cup all-purpose flour

2 tablespoons fresh lemon juice

1 teaspoon pure vanilla extract

1 and 1/2 teaspoons ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

3/4 cup confectioners’ sugar

2 tablespoons pure maple syrup

A couple teaspoons of milk or heavy cream to thin

Instructions

1-Getting started: Getting started with this apple slab pie is straightforward and enjoyable, even if you’re a beginner. Begin by preheating your oven to 375°F (190°C) and organizing your workspace. This includes having all your ingredients ready, along with tools like a baking sheet, mixing bowls, and a rolling pin, to make things flow smoothly.

2-Next, mix together the crust ingredients in a large bowl. Combine 4 cups all-purpose flour, 1 and 1/2 teaspoons salt, and 1 teaspoon granulated sugar, then cut in 1 and 3/4 cup unsalted butter until it looks like a coarse meal. Add 3/4 cup very cold ice water gradually until the dough forms clumps, then divide it into two discs, wrap them, and chill for at least 2 hours.

3-While the dough chills, prepare the filling. In another bowl, toss 10 cups peeled and chopped apples with 2/3 cup granulated sugar, 1/4 cup all-purpose flour, 2 tablespoons fresh lemon juice, 1 teaspoon pure vanilla extract, 1 and 1/2 teaspoons ground cinnamon, 1/4 teaspoon ground cloves, and 1/4 teaspoon ground nutmeg. This step ensures the flavors meld beautifully.

4-Once your dough is ready, roll out one disc to about 18×13 inches and fit it into a 10×15-inch baking pan, trimming any excess. Spread the apple filling evenly over the crust for a uniform bake.

5-Roll out the second disc to match, place it over the filling, seal the edges by folding and crimping with a fork, then cut slits for steam to escape. Brush with the egg wash made from 1 large egg and 1 tablespoon milk, and sprinkle coarse sugar if you like. Bake for 40-46 minutes until golden and bubbling, then cool on a wire rack.

6-If you want to add the glaze, whisk together 3/4 cup confectioners’ sugar, 2 tablespoons pure maple syrup, and a bit of milk to thin it out, then drizzle over the cooled pie.
