Ingredients

– Pie crust dough for 2 crusts (one for bottom, one for top)

– 3 large apples, cored, peeled, and sliced into 1/4-inch slices (about 6-7 cups or 750-875 grams)

– 1 and 1/2 cups (187 grams) fresh or frozen cranberries

– 3/4 cup (150 grams) granulated sugar

– 2 tablespoons (14 grams) cornstarch

– 1 teaspoon fresh orange zest

– 1 and 1/2 teaspoons ground cinnamon

– 1/4 teaspoon ground cloves

– 1/4 teaspoon ground nutmeg

– 2 tablespoons (30 grams) unsalted butter, cold and cubed

– 1 large egg beaten with 1 tablespoon (15 ml) milk for egg wash

Instructions

1-Prepare the pie crust dough as directed, handling it carefully through the initial steps.

2-In a large bowl, mix the sliced apples, cranberries, sugar, cornstarch, orange zest, cinnamon, cloves, and nutmeg. Let this sit while you preheat the oven.

3-Set your oven to 400°F (204°C) for the perfect baking start.

4-Roll out one disc of dough into a 12-inch circle on a floured surface, place it in your pie dish, add the filling after draining excess liquid, and dot with butter pieces. Chill it before adding the top.

5-Roll out the second disc, cut it into strips, and weave a lattice over the filling. Or, go for a full top with vents or a crumble topping for simplicity.

6-Brush the crust with the egg wash for that golden finish.

7-Bake on a sheet for 20 minutes at 400°F, then lower to 350°F (177°C) for another 30-35 minutes. Use a shield on the edges to avoid browning too much.

8-Let it cool for 3 hours at room temperature so the filling sets just right. Store leftovers in the fridge for up to 5 days.
