Ingredients
– 2 cups all-purpose flour, plus extra for dusting
– 2 and 1/2 teaspoons baking powder
– 1 and 1/4 teaspoons ground cinnamon
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, frozen and grated
– 1/2 cup heavy cream, plus 2 tablespoons for brushing
– 1 large cold egg
– 1/2 cup packed light or dark brown sugar
– 1 teaspoon pure vanilla extract
– 1 heaping cup peeled and chopped apples (Granny Smith, Honeycrisp, or Fuji recommended)
– Coarse sugar or caramel drizzle for optional toppings
Instructions
1-First, start by whisking together the flour, baking powder, cinnamon, and salt in a large bowl. This mixes the dry ingredients evenly and sets the base for that wonderful texture.
2-Next, grate the frozen butter into the dry mix and combine it using a pastry cutter, forks, or your fingers until you get pea-sized crumbs; then chill the mixture while you prepare the wet ingredients.
3-Now, whisk the heavy cream, egg, brown sugar, and vanilla extract together in another bowl until smooth.
4-Pour this into the chilled dry ingredients, add the chopped apples, and gently mix just until moistened be careful not to overmix.
5-Turn the dough out onto a floured surface and shape it into an 8-inch disc, then cut it into 8 wedges.
6-Brush the wedges with the remaining 2 tablespoons of heavy cream and sprinkle with coarse sugar if you like.
7-Refrigerate the shaped scones for at least 15 minutes to help them hold their form. Preheat your oven to 400 degrees Fahrenheit and arrange the scones on a lined baking sheet, spacing them 2 to 3 inches apart.
8-Bake for 22 to 25 minutes until golden brown, then let them cool slightly before adding any caramel drizzle.
