Ingredients

– 2 and 1/2 cups all-purpose flour

– 2 teaspoons baking powder

– 4 large eggs, at room temperature

– 1 teaspoon pure vanilla extract

– 2 tablespoons orange juice

– 3 cups peeled chopped apples (1/2-inch chunks, about 2 3 large apples)

– 1/4 cup unsalted butter

– 1 cup packed light or dark brown sugar

– 1/2 cup heavy cream

– Small pinch of salt

– 1/2 cup confectioners’ sugar

Instructions

1-Preheat the oven: Preheat the oven to 350°F (177°C) and grease a baking pan to prevent sticking.

2-Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and allspice until well combined.

3-Mix wet ingredients: In a medium bowl, whisk the oil, granulated sugar, brown sugar, applesauce, eggs, vanilla extract, and orange juice until fully mixed.

4-Combine ingredients: Pour the wet ingredients into the dry ingredients and whisk until combined, then fold in the chopped apples gently.

5-Bake: Pour the batter into the prepared pan and bake for 45 50 minutes. If the top browns too quickly after 30 minutes, cover loosely with foil.

6-Cool the cake: Remove from the oven and cool on a wire rack for at least 30 minutes before adding any toppings.

7-Prepare the glaze: melt the butter, brown sugar, heavy cream, and salt in a saucepan over medium heat, stirring constantly until the butter melts. Let it boil for 1 minute, then simmer for 1 minute. Remove from heat and whisk in the confectioners’ sugar. Let it cool and thicken for 20 minutes before spooning over the cake; warm gently if it thickens too much.
