2-Add the egg yolk and mix it in well to create a richer texture in the dough.
3-Stir in the all-purpose flour, apple pie spice, and baking soda until everything is fully combined into a uniform dough.
4-Chill the dough for 30 minutes to make it easier to handle and enhance the flavors.
5-Preheat your oven to 375°F (190°C). Scoop the dough into 12 balls and roll each one in the mixture of 1/4 teaspoon apple pie spice and 1/4 cup granulated sugar.
6-Bake the cookies for 13 minutes, then let them cool on the baking sheet before moving to a wire rack.
