Ingredients

– 1 large apple, peeled and cored (preferably Granny Smith, Honeycrisp, Braeburn, or Golden Delicious)

– 1½ cups all-purpose flour (180g)

– ½ cup granulated sugar (100g), plus extra for sprinkling

– ½ cup packed light brown sugar (110g)

– 1½ teaspoons ground cinnamon (divided)

– ½ teaspoon baking soda

– ¼ teaspoon baking powder

– ¼ teaspoon salt

– ¼ teaspoon grated nutmeg

– 2 large eggs, beaten (room temperature recommended)

– ½ cup unsalted butter, melted (120ml) or ½ cup vegetable oil as an alternative

– ½ cup chopped walnuts or pecans (60g) – optional

– 1 teaspoon pure vanilla extract – optional

– ½ cup unsweetened applesauce or whole milk – optional for added moisture and texture

Instructions

1-Preheat and Prepare: Set your oven to 350°F (175°C). Grease an 8×4-inch or 9×5-inch loaf pan and line it with parchment paper, leaving extra overhang for easy bread removal.

2-Prepare the Apple: Peel, core, and grate the apple using the large holes of a grater or chop into small ¼-inch pieces. Set aside.

3-Mix Dry Ingredients: In a medium bowl, whisk together 1½ cups all-purpose flour, ½ cup granulated sugar, ½ cup light brown sugar, 1½ teaspoons ground cinnamon (reserve a portion for sprinkling), ½ teaspoon baking soda, ¼ teaspoon baking powder, ¼ teaspoon salt, and ¼ teaspoon grated nutmeg.

4-Combine Wet Ingredients: In a separate large bowl, beat 2 large room-temperature eggs, then whisk in ½ cup melted unsalted butter (or vegetable oil), and 1 teaspoon vanilla extract if using.

5-Blend Batter: Gradually stir the dry ingredients into the wet mixture until just combined. Optionally, add ½ cup unsweetened applesauce or whole milk for extra moisture and softer texture.

6-Fold in Apples and Nuts: Gently fold the grated/chopped apple and ½ cup chopped walnuts or pecans (optional) into the batter, ensuring even distribution.

7-Pour and Sprinkle: Transfer the batter into the prepared pan and smooth the top. Sprinkle extra granulated sugar or the reserved cinnamon sugar over the surface for a subtle sweet crust.

8-Bake: Bake for 55 to 65 minutes (8×4-inch pan) or about 60 minutes (9×5-inch pan). If the top browns too fast, tent the bread loosely with foil after 30-45 minutes.

9-Test Doneness and Cool: Insert a toothpick into the center; if it comes out clean, the bread is ready. Cool in the pan on a wire rack for at least 10 minutes, use the parchment overhang to lift out the bread, then cool completely (about 30 minutes) before slicing.
