2 lb (about 900 g) rack of lamb, Frenched (fat and silver skin trimmed, bones exposed)
1 tablespoon olive oil (or high-smoke point oil such as avocado or canola oil)
3 cloves garlic, crushed or minced
½ tablespoon fresh or dried rosemary
½ tablespoon fresh or dried thyme
Salt and pepper, to taste
Optional for enhanced flavor:
Garlic powder (1 teaspoon)
Marinating with red wine or balsamic vinegar splash
Brining in 4 cups water with ¼ to ⅓ cup coarse salt for 30 minutes to reduce gaminess and enhance flavor
Instructions
1. Remove the lamb from the refrigerator about 15-20 minutes before cooking to reach room temperature. If using brine, soak the lamb rack for 30 minutes beforehand, then rinse and pat dry.
2. In a small bowl, combine rosemary, thyme, crushed garlic, salt, and pepper (add garlic powder if desired).
3. Preheat the air fryer to 400°F (200°C) for approximately 5 minutes.
4. Pat the lamb dry with paper towels. Drizzle with olive oil and rub it evenly into the meat. Then generously apply the herb and garlic mixture all over the lamb.
5. Place the lamb fat side up in the air fryer basket or rack, ensuring pieces do not overlap if cooking multiple racks or chops.
6. Cook at 380°F for 15-18 minutes, flipping halfway through (or 12 minutes per side if cooking at 400°F as an alternative method). Use a meat thermometer to check doneness: 120°F for rare, 125-130°F for medium-rare, 130-135°F for medium, 140-145°F for medium-well, and 150°F for well done.
7. Remove the lamb from the air fryer and tent loosely with aluminum foil. Let it rest for 5-10 minutes to allow juices to redistribute.
8. Slice between the bones into individual rib chops and serve hot. Optional accompaniments include mint sauce or chimichurri.
