1ยฝ lbs (about 680 g) chicken wings or boneless skinless chicken thighs
3 tbsp potato starch or cornstarch
1 tsp garlic powder
1 tsp onion powder
2 tbsp rice wine vinegar
1 tbsp soy sauce
2 tsp minced fresh ginger
ยพ tsp kosher salt
ยฝ tsp black pepper
2 large eggs, beaten
Cooking oil or spray
4 tbsp low sodium soy sauce
4 tbsp light or regular brown sugar
ยฝ tbsp garlic powder or 2 garlic cloves, minced
1 tbsp rice wine vinegar
ยพ tsp coarse black pepper
1 tbsp water
3 tbsp gochujang (optional)
3 tbsp honey (optional)
3 tbsp ketchup (optional)
1 tbsp sesame oil (optional)
Toasted sesame seeds
Thinly sliced green onions or scallions
Instructions
1. Pat dry chicken wings or thighs with a paper towel.
2. If using thighs, marinate in rice wine vinegar, soy sauce, ginger, salt, and pepper for 15โ20 minutes.
3. Mix starch, garlic powder, and onion powder. For wings: coat evenly. For thighs: dip in eggs, then coat with cornstarch.
4. Preheat air fryer to 400ยฐF (200ยฐC). Arrange chicken in a single layer, air fry wings 20 minutes (turn halfway), thighs 15 minutes (turn after 8 minutes).
5. Combine soy sauce, brown sugar, garlic, vinegar, pepper, and water in a pan; mid-heat for a sauce.
6. Mix in gochujang, honey, ketchup, or sesame oil if desired.
7. Toss cooked chicken in sauce, garnish with sesame seeds and green onions. Serve immediately.
