Crispy Air Fryer Chicken and Broccoli with Creamy Chili Mayo Sauce

Ingredients

1 pound (450g) boneless skinless chicken breast, cut into 1-inch pieces
1 medium head of broccoli, cut into florets (about 2 cups or 200g)
1 tablespoon olive oil (or other neutral oil like peanut or canola oil)
Kosher salt and pepper, to taste
Optional: 1 cup sliced mushrooms or 1/2 medium onion, sliced thick

For the Marinade:
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon maple syrup (or 1 teaspoon honey)
2 teaspoons Italian seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 tablespoon soy sauce
Optional: 2 cloves garlic, minced
Optional: 2 teaspoons fresh grated ginger
Optional: 1 teaspoon sriracha or hot sauce
Kosher salt and pepper, to taste

Instructions

1. Combine all marinade ingredients in a bowl. Divide chicken and broccoli (and optional mushrooms or onions) into separate bowls, then toss each with half of the marinade. Marinate chicken for 15 minutes at room temperature or up to 1 hour in the fridge.
2. Toss broccoli florets with olive oil, salt, and pepper.
3. Preheat air fryer to 380°F (195°C).
4. Place chicken in a single layer in the air fryer basket and cook for 10 to 12 minutes until nearly cooked through.
5. Add broccoli (and optional vegetables) to the basket. Toss or shake to mix, and continue air frying for an additional 6 to 10 minutes until chicken is fully cooked and broccoli is crisp-tender, shaking halfway through.
6. Season with additional salt, pepper, or lemon juice if desired.
7. Serve over rice, garnish with parsley, chili flakes, or a drizzle of creamy sriracha mayo (mix mayo with sweet chili and hot sauce).
