🥗 Enjoy a creamy, nostalgic fruit salad that brings together the perfect balance of sweet and tangy flavors in just minutes
🍍 Create a crowd-pleasing dessert salad that’s perfect for potlucks, holidays, and family gatherings with minimal effort

  • Total Time: 1 hour 5 minutes
  • Yield: 8 servings

Ingredients

– 1 cup sour cream (or plain Greek yogurt)

– 1 cup sweetened shredded coconut flakes

– 1 cup mini marshmallows

– 1 cup canned pineapple tidbits or chunks, well drained

– 1 cup canned mandarin oranges, well drained

– Maraschino cherries for garnish (optional)

Instructions

1-Drain the fruits thoroughly: Open cans of pineapple tidbits or chunks and mandarin oranges. Use a colander or fine mesh strainer. Press gently to remove excess liquid. This step prevents a soggy mess.

2-Combine dry ingredients: In a large bowl, mix 1 cup drained pineapple, 1 cup drained mandarin oranges, 1 cup mini marshmallows, and 1 cup sweetened shredded coconut flakes.

3-Add the creamy base: Gently fold in 1 cup sour cream (or plain Greek yogurt). Stir until everything coats evenly. No heavy mixing needed.

4-Transfer and chill: Spoon into a serving dish. Cover tightly. Refrigerate 1 to 4 hours for flavors to meld and creaminess to peak.

5-Garnish and serve: Top with optional maraschino cherries. Dish up chilled for best texture.

Notes

🥥 Toast the coconut flakes lightly before adding for extra flavor and crunch – just spread on a baking sheet and bake at 350°F for 3-5 minutes
🍍 For extra fresh flavor, add 1/2 cup of fresh diced pineapple or mandarin segments along with the canned fruit
🥄 Make this salad ahead of time – it actually tastes better after chilling for a few hours as the flavors meld together
