1/4 pound Italian salami, julienned
2 cups shredded mozzarella cheese
1/3 cup extra-virgin olive oil
2 to 3 tablespoons red wine vinegar
2 cloves garlic, minced
2 to 3 teaspoons Dijon mustard
1/3 cup freshly grated Pecorino Romano or Parmesan cheese
1/2 teaspoon salt
Freshly ground black pepper, to taste

Instructions

1. In a jar or small bowl, whisk olive oil, vinegar, minced garlic, mustard, salt, pepper, and Pecorino Romano until blended.
2. In a large bowl, combine iceberg and romaine lettuce, salami, mozzarella, and garbanzo beans.
