1 head iceberg lettuce, rinsed and finely chopped
1 head romaine lettuce, shredded
1 (15-ounce) can garbanzo beans, rinsed and drained
1/4 pound Italian salami, julienned
2 cups shredded mozzarella cheese
1/3 cup extra-virgin olive oil
2 to 3 tablespoons red wine vinegar
2 cloves garlic, minced
2 to 3 teaspoons Dijon mustard
1/3 cup freshly grated Pecorino Romano or Parmesan cheese
1/2 teaspoon salt
Freshly ground black pepper, to taste
Instructions
1. In a jar or small bowl, combine olive oil, vinegar, minced garlic, Dijon mustard, salt, pepper, and grated cheese. Whisk or shake until well blended.
2. In a large bowl, mix together iceberg lettuce, romaine lettuce, salami, mozzarella cheese, and garbanzo beans.
3. Drizzle the dressing over the salad and toss to coat all ingredients evenly.
4. Garnish with additional grated cheese and black pepper if desired. Serve immediately.
